Winemaking Philosophy

Our Winemaking emphasizes a respect for tradition and for hand-crafted techniques, including the use of indigenous yeast and bacteria, minimal intervention and no filtration of the wines. Our labor-intensive, artisanal approach to winemaking produces wines which are true to their varietal character and evoke an honest sense of place. For our white wines, we pick and press the grapes, use indigenous yeast fermentation and extended aging on the lees in both neutral oak barrels and small stainless steel barrels. Both the cooperage and lees contact help to express the minerality and nuance of the white grapes and lend a complexity and depth to the mouth-feel. For our red wines, we use a moderately cool soak pre-fermentation, followed by an indigenous yeast fermentation with aerative pump-overs, and finish with an extended maceration with heat. Malolactic fermentation takes place in French oak barrels, one third of which are new. The blends are assembled in the summer after the prior year’s harvest and bottled the following winter without filtration. These techniques help to produce stylistically unique wines with lush fruit and silky, soft tannins. Laurel Lake Vineyards aspires to make fresh crisp and delicious North Fork Long Island wines that reflect a sense of place and exhibit both perfume and power.   • 2018 LAKE ROSÈ

    $10.00/glass | $20.99/bottle | $221.65/case*   A lovely rosé made in a truly classic style, with rosé-pink color lightly fizzy, this wine is practically a Long Island Summer in a bottle. Created from a small lot of Cabernet Sauvignon grapes, dry yet robustly fruity. Its flavors are light and hint at watermelon and raspberries with refreshing citrus. An extremely food-friendly wine, try it with simple fish dishes, grilled chicken, pork or even lamb to tuna or a grilled vegetable platter.

  • 2014 PINOT NOIR RESERVE

    Won Bronze Medal for the 2019 New York Wine Classic $12.00/glass | $31.99/bottle | $337.81/case*   The primary fermentation was made in an open tank pushing down the grapes three times per day to extract more flavors from the skin, and then aged for 18 months in 100% French oak barrels (used). This Pinot Noir is smooth, rich and fleshy with a complex array of cherry, plum and blackberry. Pairs well with light pasta and cheeses.

It is slightly smoky and you will find flavors of dry plums and vanilla. Pairs well with chicken, turkey, and pasta.

This wine was barrel aged in French oak for 18 months. A soft and silky wine with hints of pepper, the palate gives generous berry flavors with a fine toasty oak and vanilla flavor.
